I’m not sure what my problem was exactly. I think I must not have liked the texture because there is definitely nothing wrong with the creamy, mild flavor or ricotta cheese. Whatever it was, I’m glad I outgrew it. Now I’m older and wiser and know that ricotta cheese can make recipes sing!
